They include Farmstead Mascarpone, a sweet Italian cream cheese; Farmstead Fresh Mozzarella, a fresh, milky cheese packed in water; Farmer’s Rope, a handmade, coiled string cheese with a full, creamy flavor; and Les Frères®, an American Original with a washed-rind and an earthy, nutty flavor. Dreamfarm has the pleasure of milking goats morning and evening to create cheese on its small family farm. Artisan cheese maker Diana Murphy handcrafts cheese two to three times a week. Uplands Cheese Co./Grass Dairy is an organic, rotational grazing farm and cheese business in Dodgeville. Our cheese, Pleasant Ridge Reserve, is made on the farm using milk from our own pasture-fed cows. We only make cheese when our pastures are at their best and age it in caves for 4-18 months. Our award-winning cheese (Best of Show 2001 and 2005 American Cheese Society; U.S. Champion 2003 WCMA) is made from raw milk in the style and tradition of French alpine cheeses.
